Black-salsify
Scorzonera hispanica
Black salsify is a hardy, low-maintenance root vegetable grown for its long, edible taproot and is well suited to temperate garden beds. Plant in deep, loose, stone-free soil and provide full sun; water only when the top couple of inches of soil are dry. Harvest roots in autumn of the first or second year when they reach pencil thickness or larger.
