Celery is a demanding cool-season vegetable that requires consistently moist, fertile soil and a long growing season of 3-4 months to produce crisp, flavorful stalks. It prefers cooler temperatures between 60-70°F and does not tolerate drought or intense summer heat, making timing of planting critical.
