Rock samphire (Crithmum maritimum) is a salt-tolerant coastal herb with aromatic, fleshy leaves traditionally used in Mediterranean cuisine and herbal medicine. Plant it in well-drained, gritty or sandy soil in a sunny to partly shaded spot, and water sparingly once established. It is an excellent choice for seaside gardens, rock gardens, or container herb plantings.
