Eryngo is a striking, architectural perennial with spiny, thistle-like foliage that excels in hot, dry, and exposed conditions. Once established it is exceptionally drought tolerant and requires very little maintenance, making it ideal for gravel gardens, dry borders, and Mediterranean-style plantings. Its silvery-blue flower heads are highly attractive to bees and butterflies from midsummer into autumn.
