Rocket salad (arugula) is a fast-growing leafy green that thrives in full sun and well-drained soil, making it ideal for raised beds, containers, and windowsill herb gardens. Sow seeds directly and keep soil lightly moist; it bolts quickly in heat, so successive plantings every 2–3 weeks ensure a continuous harvest. Harvest outer leaves when 3–4 inches tall for the mildest flavor, and allow some plants to flower to attract pollinators.
