Silverhull buckwheat
Fagopyrum esculentum
Buckwheat is a fast-growing, easy-to-maintain grain crop that thrives in average to poor soils with moderate moisture and full sun to partial shade. It establishes quickly and produces masses of small white flowers that are highly attractive to pollinators, making it an excellent cover crop or companion plant. Harvest seeds once the hulls turn dark brown and the plant begins to dry down.
