Yacón is a vigorous Andean perennial grown primarily for its sweet, crisp edible tubers and used medicinally for blood sugar management. Plant in well-draining, fertile soil in a sunny to partly shaded spot and water consistently throughout the growing season. Harvest tubers in autumn after foliage dies back, and store divisions to replant the following year.
