Udo is a dramatic East Asian perennial valued for its bold tropical-looking foliage and edible young shoots, which are blanched and eaten as a vegetable in Japanese cuisine. Cut back to the ground in autumn; it will re-emerge vigorously each spring and can reach six feet tall in a single season.
